Years and years ago... okay, it was only 2012... but that's years and years, right? Nevermind. I'm tired and delirious. So, I shared this Easy Layered Shrimp Dip Recipe awhile back. And to this day - I still love this recipe. Like - a lot. So when my assistant pointed it out that it could use a little TLC on the pictures front - I immediately added it to my to-do list for updates!

The original post was really short and sweet - written in a hurry just before we hosted a party. This time around I'm writing late at night while catching up on American Idol... and it still might be short & sweet because I'm tired, tired, tired.

Here's what you'll need:

  • (2) 8 oz. packaged of cream cheese, softened
  • ½ cup co*cktail sauce
  • ½ cup salsa
  • 1 cup shredded cheddar (or more if you like... I like cheese!)
  • ½ pound - 1 pound of shrimp (you can use small canned shrimp or fresh shrimp chopped up... and you can use anywhere from half a pound to a pound, depending on how shrimpy you want your dip 😉 )
  • 5-6 sprigs of green onion, chopped up (I skip the white part, use it if you want)

  • First, spread two 8 oz. packages of cream cheese onto a platter. A 12" round is a good size or for today's post, I used a 9x13" disposable pan. Why? Because dishes.

  • Mix together theco*cktail sauce & salsa together in a small bowl.

  • Pour the co*cktail sauce over the cream cheese and spread it out all the way to the edges.

  • Top that with the shrimp - evenly scattered over the sauce. I'm gonna be honest here. I really prefer larger shrimp chopped up - but the little canned ones were all I had on hand today so they had to do. I mean, they're good too... but shrimp is one of my favorite foods and I like the good ones when I can get them fresh! {Hello Caleb's hand... my helper for the day!}

  • Sprinkle the shredded cheddar evenly over the shrimp. {Hello Sarah & Caleb's hand... two helpers for the day!}

  • Garnish with chopped green onions!

  • That's it!! Enjoy immediately or cover with plastic wrap and chill until ready to eat. Serve with snack crackers!!

Description

An easy, delicious party dip that can be made in minutes and is always a hit!!

Ingredients

  • 2 8 oz. boxes of cream cheese, softened
  • ½ cup co*cktail sauce
  • ½ cup salsa
  • 8 oz. - 1 pound cooked shrimp, peeled, chilled and chopped (or use small canned shrimp)
  • 1 cup shredded cheddar
  • 5-6 sprigs of green onion, chopped

Instructions

  1. On a 12" platter or 9x13 dish, spread out the cream cheese to cover the entire surface. I use the back of a spoon to do this. It's easier if the cream cheese is soft, but if you're in a hurry, you can do it cold with a little work.
  2. Mix together the co*cktail sauce & salsa in a small bowl. Then spread over the cream cheese to the edges.
  3. Spread the chopped shrimp evenly over that. Sprinkle and cover with shredded cheddar. Garnish with green onion.
  4. Serve immediately if you used cold cream cheese or cover tightly with plastic wrap and chill until party time!
  5. Serve with Wheat Thins or another sturdy cracker!!

    This is really good using "homemade chili sauce" Thats what it is called in store. In glass round jar with label on the lid. We make this all the time & omit the shrimp sometimes for those that don't like seafood
